This cake is always the show off element in most indian weddings and people are now going the indian way instead of traditional western themed tiers and ruffles. Generating huge demand, the Jaimala Cake is very much in trend which has the couple garlanding each other. But the most eminent one is the Saat Phera cake where edible figures of couples are taking pheras. The look of the cake comprises of white cream outside with Belgian chocolate inside. Decoration is totally upto the maker.
The challenge here is to make the cake resemble the special day as much as possible. This includes the couple on the cake resembling the real couple with similar attire and faces.

From the shade of the dress to the flair, everything has to be well coordinated. As its the Big Fat Indian Wedding, people want lots of bling like creating edible diamonds using isomalt sugar for the jeweled finish.
India being a secular state has wide variety of religions. For a bengali wedding, the cake needs to have a bengali couple handcrafted in a way that they are seen wearing a dhoti and red and white sari.

The taste should also be in sync with these. For bengalis, it is usually layered gud sandesh or strawberry sandesh cake with rangoli design on top and for punjabis it is ras malai or gulab jamun filling.
